Shrimp processing technology

The main raw materials: shrimp, salt and so on.
Equipment appliances: iron pots, baskets, water stoves.
Production method: The hairy shrimps are sorted and selected, and sieves are used to screen for more impurities. If the raw materials are not clean, they should be washed. After washing, they should be drained in the baskets. About 6 kg of hairy shrimps should be placed in each basket. There are several ways to cook:
1 turn the basket boil method. That is, in a large iron pan with a diameter of 90 centimeters, seven full minutes of fresh water is added, and 2 kg of salt is added. After boiling, the appropriate amount of salt is sprinkled on the shrimp baskets after the basket is drained. 15 kg, 2.5 kg of salt for first-class shrimp, 3.5 kg of salt for secondary shrimp, and 4.5 kg of salt for third-grade shrimp), put it in pot, add lid, and open it after boiling. Cover, pull the basket with the basket, rotate it so that the shrimp is cooked evenly. When the shrimp has to be straight, remove the shrimp basket and let it cool in a ventilated place. In general, 5 to 8 baskets are used to change the pot water in order to prevent the pan from being too salty and affect the quality of the finished product.
2 direct cooking method. Coming with a certain concentration of salt water into a large iron pan, boil the shrimp and pour it into the pot of water, cook for 2 to 3 minutes, then remove and let cool.
3 water stove boiling method. Wash the drained hairy shrimps in a basket, put about 6kg into each basket, sprinkle the salt on the top of the shrimp (salt amount is the same as the transfer basket method), put the basket of hairy shrimp into the boiled salt water, and cook. When you put in the second basket, the pan is full, and the first basket is already cooked. Take out one basket in turn and add one basket.
After the cooked shrimp is fully allowed to cool, sprinkle the shrimp hair evenly on the mat, or dry it in a drying room. Generally speaking, it is advisable to dry it to 90% dry. It should be packed in bags or bamboo baskets, or packed in polyethylene and sealed.
