1. Project Introduction While the aquaculture industry in China has developed rapidly, the aquatic product processing industry has lagged behind. Since the 1990s, China's aquatic industry, especially freshwater fisheries, has entered a period of rapid development. At present, freshwater fish are generally sold on the spot, some are used for processing, and some are exported. Freshwater fish as a raw material is generally processed only as frozen and salted products, except for a handful of deep-processed aquatic product convenience foods in a few provinces and regions. China is one of the countries with the largest water area for freshwater fish farming. There are many kinds of freshwater fish, among which carp, carp, grass carp, and carp account for the most part. In particular, squid has been favored by fish farmers because of its ease of breeding, rapid growth, and low cost. However, due to its thin flesh and more fishbone, squid has less flavor than other freshwater fish and is not very popular in the market, and its price is low, which is a low-cost fish. To a certain extent, it affects the enthusiasm of fish farming. Therefore, how to deep-process the freshwater fish, especially low-priced freshwater fish such as carp, has become an urgent problem to be solved.
In this project, a total of three major categories of 9 fish carp products were studied, including surimi sausages, fish leek sausages, fish bone boiled mud sausages, carrot high-calcium fish paste cans, tomato high-calcium fish paste cans, and green bean fish paste cans. Fish oyster crab cake, fish 糜 crab leg, fish 糜 shrimp cake. These products have high nutritional value, strong practicality, and have great promotion and application value.
